We’re taking crispy tortilla chips and loading them with crumbled tofu simmered with onion, jalapeño, vegetable broth, and a rich red salsa, then finishing everything with melty vegan cheese, avocado, cilantro, and fresh lime.
The best part? Instead of soaking the chips directly in the sauce and risking a soggy mess, we’re cooking the sauce right into the tofu and spooning everything over the chips. You still get all that chilaquiles flavor with WAY more crunch.

Plant-Based Chilaquiles

Ingredients
For the saucy tofu:
- 1 block extra-firm tofu, drained and crumbled
- 1/2 yellow or white onion, diced
- 1 jalapeño, finely diced
- 2 cloves garlic, minced
- 1/2 cup vegetable broth
- 1 1/2 cups red salsa or your favorite Mexican-style red sauce
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon turmeric, optional
- Salt and black pepper to taste
- 1/2 cup black beans, drained and rinsed, optional
For serving:
- 5–6 cups sturdy tortilla chips
- 3/4 cup vegan shredded cheese
- 1 avocado, sliced
- 1/4 red onion, thinly sliced
- Fresh cilantro, chopped
- Fresh or pickled jalapeño slices
- Lime wedges
- Vegan sour cream or cashew crema
- Pico de gallo, optional
- Sliced radishes, optional
- Hot sauce, optional
Instructions
1. Sauté the vegetables
Heat a large skillet over medium heat. Add the diced onion and jalapeño with a splash of vegetable broth.
Cook for about 2–3 minutes, until the onion begins to soften.
Add the minced garlic and cook for another 30 seconds.
2. Add the crumbled tofu
Crumble the tofu directly into the skillet.
Season with cumin, smoked paprika, chili powder, turmeric, salt, and black pepper.
Pour in about 1/2 cup of vegetable broth and stir everything together.
Cook for 4–5 minutes, allowing the tofu to absorb the seasonings and some of the broth.
3. Make it SAUCY
Pour your red salsa or red sauce directly into the tofu mixture and stir until everything is completely coated.
If you’re adding black beans, stir them in now.
Reduce the heat slightly and allow everything to simmer together for another 5 minutes.
You want the finished tofu to be saucy enough that some of that red sauce drips down onto the chips, but not so watery that you’re pouring soup over them.
If it gets too thick, add another splash of vegetable broth.
4. Build your chilaquiles
Spread the tortilla chips across a large serving platter or individual plates.
Immediately spoon the hot tofu and red sauce mixture generously over the chips.
Sprinkle vegan shredded cheese over the hot tofu so it starts getting nice and melty.
5. Add ALL the toppings
Finish with sliced avocado, red onion, cilantro, jalapeños, vegan crema, pico de gallo, radishes, hot sauce, and plenty of fresh lime juice.
Serve immediately while the chips are still crunchy.
The Secret Is Keeping the Chips Separate
Traditional chilaquiles are usually simmered directly in the sauce, which gives them their signature softer texture.
But if you’re someone who wants a little more crunch, this method is SO good.
Cooking the red sauce directly into the tofu gives you a rich, flavorful topping while letting you control exactly how saucy your chips get.
Every bite has a little bit of crispy tortilla chip, spicy sauce, seasoned tofu, creamy avocado, melty vegan cheese, and fresh toppings.
And you don’t end up with a plate of soggy chips five minutes later.
Make Them Even Better
There are so many ways to customize these depending on what you have in the fridge.
Try adding:
- Black beans
- Roasted corn
- Pickled red onions
- Shredded cabbage
- Pico de gallo
- Fresh tomatoes
- Vegan queso
- Cashew crema
- Salsa verde
- Serrano peppers
- Fresh radishes
- Extra avocado
You can also make the tofu mixture ahead of time and store it in the fridge. When you’re ready to eat, reheat the tofu and spoon it over fresh tortilla chips.
Why Tofu Works So Well Here
Tofu is perfect for chilaquiles because it takes on whatever flavors you cook it with.
Instead of leaving it plain and expecting the toppings to do all the work, we’re simmering the crumbled tofu directly in vegetable broth, spices, jalapeño, onion, garlic, and red sauce.
That means the tofu actually tastes like something.
And because we’re using an entire block, it gives this meal a substantial plant-based protein source that makes it much more satisfying than simply eating chips and salsa for breakfast.
Although I fully support chips and salsa for breakfast when necessary.
Plant-Based Breakfast Does NOT Have to Be Boring
If your idea of a healthy plant-based breakfast is oatmeal seven days a week, we need to expand the menu.
Eating plant-based can still mean big, savory, comforting meals.
These chilaquiles have the crispy chips, spicy sauce, creamy avocado, melty cheese, and all the toppings you’d want from a weekend breakfast. The difference is that we’re building the heart of the meal around seasoned tofu and other plant-based ingredients.
