  • 12 medium/large organic white button mushrooms
  • 1 cup organic Italian seasoned breadcrumbs

  • 2 garlic cloves, minced
  • 1/2 tablespoon parsley (dried)
  • 1/2 tablespoon basil (dried)
  • 1/2 tablespoon oregano (dried)
  • 1/2 tablespoon garlic powder

  • 3 tablespoons avocado oil, divided

    • Remove the stems from the mushrooms and dice them finely—these will be used in the stuffing mixture.
  2. Make the Stuffing:
    • Heat the vegan butter in a frying pan over medium heat.
    • In a large mixing bowl, combine the breadcrumbs, parsley, basil, oregano, garlic powder, onion powder, vegan parmesan, and salt and pepper.
    • Pour the breadcrumb mixture into the frying pan with the melted butter. Add 1 tablespoon of avocado oil.
    • Stir continuously, ensuring the breadcrumbs absorb the butter and oil evenly. Cook until the mixture turns golden brown and holds together when pressed. Remove from heat.
  3. Cook the Mushroom Stems:
    • In the same frying pan, add the diced mushroom stems to the remaining oil. Cook until they are browned and softened.
    • Mix the cooked mushroom stems into the breadcrumb mixture.
  4. Stuff the Mushrooms:
    • Preheat your oven to 350°F (175°C). Line an 8×8 baking dish or cookie sheet with parchment paper.
    • Stuff each mushroom generously with the breadcrumb mixture, pressing it down to create a mound on top. Be careful not to break the mushrooms.
  5. Bake the Mushrooms:
    • Arrange the stuffed mushrooms on the prepared baking sheet. Drizzle the tops with the remaining 2 tablespoons of avocado oil, ensuring each mushroom gets a bit of oil.
    • Sprinkle extra vegan parmesan over the tops.
